With this amazing heatwave we’re having, and Ireland reopening its doors to international travel, I'm getting really excited about planning our summer getaway!
Whether you’re holidaying near or far this year we have you covered with the most comprehensive packing list for kids on our blog. Over the years, I’ve learned to become a more essential packer. I know what basics we need, and the things that end up coming back home unused. So after 15 years of traveling with kids, we’ve listed all the essentials you’ll need while still allowing you to pack light!
We also have a wonderful watermelon ice lolly recipe. It’s hardly a recipe really! Instead, I like to think of it as a great activity to do with kids during the summer, with a delicious reward after – one of the most refreshing summer treats.
In our recipe section this month we have a fresh and tasty summer recipe - a cooling ginger and honey tonic, another delicious way to cool down.

Ginger & Honey Tonic
There are summer drinks and there are winter ones, and this for me is usually a winter one, but because of the amazing heatwave we've had this week I've tweaked the recipe and it's now become a simple refreshing ice cold drink.
Ginger acts as an antioxidant, has powerful enzymes for digestion, eliminates toxins and purifies blood, which is why during winter when I feel a cold coming on, I sip this soothing hot drink. But with the good weather we're enjoying, and in an attempt to eat and drink more nutritiously, especially to help boost my immune system, I decided to try this as a refreshing ice-cold drink instead, and it's just as delicious.
What you will need:
3 tablespoons of grated frozen ginger, for a finer grate
3 slices of fresh ginger
3 tablespoons of honey
How to make refreshing ginger and honey tonic:
Boil one liter of water in a pan. Add 3 tablespoons of grated ginger, 3 slices of fresh ginger, 3 tablespoons of honey, and set aside to cool.
To serve, I like to add a slice of lemon and a sprig of mint and sip with a straw.
