WEEKEND RECIPE | PASS THE PARSNIPS
Parsnip, Mascarpone and Maple Syrup Cake
Parsnip season is upon us; cue waves of warming soup, piles of honey-roasted Sunday lunch side dishes and oodles of buttery mash. But there's yet more to the humble parsnip than meets the eye.
This super-seasonal cake brings the earthy, caramel/vanilla complexity of maple syrup and the sweetly acidic tang of luxurious mascarpone cheese together with the inherent sweetness of parsnips in perfect harmony; bake it once, and you'll never look at a Carrot Cake again.
Ingredients
175g butter 250g soft brown sugar 100ml maple syrup 3 large eggs 250g self-raising flour 2 tsp baking powder 2 tsp mixed spice 250g parsnips, peeled and grated 1 medium eating apple, peeled, cored and grated 50g pecans, roughly chopped The zest and juice of 1 small orange
For the filling: 250g mascarpone 4 tbsp maple syrup
Method
1. Preheat the oven to 180°C/gas mark 4. Lightly grease a deep 20cm springform tin with butter and line the base with baking parchment.
2. In a large pan over a medium heat, melt the butter, sugar and maple syrup together until the butter has completely melted and the sugar has dissolved. Allow to cool slightly before whisking the eggs into the sweet, buttery mixture, followed by the flour, baking powder and mixed spice, sifted in together guarantee an even, lump-free result. Add the prepared parsnips, the apple, the orange zest and juice and the chopped pecans (reserving 1 tbsp for sprinkling on the cake before baking) and stir thoroughly to form a thick batter.
3. Plop the batter into the tin, level the top and sprinkle with the reserved chopped pecans. Bake for 35-40 minutes until the top of the cake springs back when pressed lightly and a skewer inserted into the centre comes out cleanly (note: if the top of the cake browns before the inside is cooked, cover the top loosely with foil and carry on baking, checking to see how it's getting on every 5 minutes).
4. Allow the cake to cool slightly in the tin then turn out onto a wire rack to cool completely before slicing in half horizontally.
5. Beat the maple syrup into the mascarpone and use to fill the cake. For extra-added appeal, lightly dust the surface of the cake with icing sugar just before serving.

WEEKEND WINE | ITALIAN ALPINE STARS
Four great wines from northern Italy
Gavi di Gavi DOCG – Fontanafredda
One of Italy's most fashionable whites, it is noted for acute dryness and fresh, flinty acidity. This is a bright straw-yellow wine with greenish highlights. It has a full, delicate, elegant bouquet which brings flowers and fresh fruit to mind – mostly lemons, lilies of the valley and green apples. Its palate is attractively young, dry, fresh and well-balanced | £19.95
San Vincenzo IGT – Anselmi
Fruity, youthful style, reminiscent of hazelnuts and peaches. No wood maturation, just clean crisp flavours with a long finish | £15.95
Vintage Edition Secco – Bertani
This fascinating limited edition wine deliberately goes back to the way that the top wines of Valpolicella were crafted historically between the 1860s and 1930s, before the invention of Amarone. Intriguingly, this is aged 100% in barrels, but there is 0% oak, as the barrels are made entirely of chestnut and cherry wood – a tradition going back centuries in this part of Italy. A must-try wine! | £27.50
Barolo di Serralunga d'Alba DOCG – Fontanafredda
From the Piemonte region this is a deep red with ruby highlights, a truly superb Barolo with a clear-cut, intense nose with overtones of vanilla, spices, withered roses and underbrush. The palate is dry, but soft, full bodied, velvety and well balanced, and is engagingly complex throughout the lengthy finish. Showing great personality | £35

Breitling’s new Superocean range
In the 1960s, the new sport of scuba diving was all the rage; for divers, timing was everything, and Breitling set out to give them the clearest display possible.
This pared-down watch they named the Slow Motion, with its clean lines, chunky luminescent indexes, squared-off hands and a high-contrast dial, all designed for maximum legibility.
But what people really fell in love with was the look. The new Superocean is the homage to the Slow Motion's celebrated design, but with all the modern features we now love: such as a scratch-proof, ceramic-inlayed bezel and brightly coloured dials. Broad hands and indexes in luminescent Super-LumiNova® offer clearer visibility than ever before on the 42mm or the unisex 36mm case.
The watch is water resistant to 300m (1000 ft), as well as being shock, sand and saltwater-resistant. Automatic with a power reserve of approx 38 hours. There are two strap options (rubber and metal bracelet) and a folding clasp that allows for adjustments to wear over rashies and wetsuits.
Best of all, this is no longer just a dive watch. Surf with it, swim with it, hit the bar with it – and it will still look great paired with a suit or out for a smart dinner. The new Superocean perfectly balances the nostalgia of the Slow Motion heritage with a fresh new look.

Curated by Daniel McCabe
After ‘The Home’ and ‘The Shop’, South Korea’s Magazine B continues its ‘bookazine’ series on work/living spaces with 'The Neighbourhood’. This fascinating third issue examines the neighbourhood as the cornerstone of modern society, a place in which we constantly envision our perfect community. It attempts to define the sort of neighbourhood we might all choose to live in by exploring six ‘ideal’ but very different locations – Körnerkiz in Berlin, Sharon in Paris, Seochon in Seoul, Greenwich Village in New York, Venice in Los Angeles and Hampstead in London – to see what they have in common and what sets them apart. | £24.99

Clifton Contemporary Art: Form and Freedom – Andrew Bird & Chris Buck
In the paintings of Andrew Bird and the cast bronze sculptures of Chris Buck, there is an exciting juxtaposition between the spontaneous and structural form. The balance between these forces gives their work impact and presence – revealing more the closer you look.
Through Andrew’s layered, potent canvases, you can see the interplay between form and freedom, as he conjures fleeting images or what he calls ‘slices of time’ with immediate, gestural marks and rich, sometimes unexpected colours. Yet always there is a sense of solidity and permanence underneath – like the relationship between ancient rock and fleeting clouds.
For Chris, creative freedom and spontaneity are his points of departure. His sculptures are essentially abstract, sometimes inspired by found objects and developed without planning or drawing. Yet beyond the enigmatic titles, patinated textures and polish surfaces, there is always a timeless form, like something shaped by the elements or made in the distant past.
Explore the interplay between form and freedom in these powerful, charismatic works at Clifton Contemporary Art this autumn, 15 October – 5 November.
